Arugula with Lemon and Olive Oil

This is the simplest, yet most delicious of recipes, and gives you an easy way to include a fresh, green into your everyday diet.

3oz Baby Arugula (6 cups)
1 Tablespoon Freshly Squeezed Lemon Juice
1/8 teaspoon Salt
2 Tablespoons Extra Virgin Olive Oil
Pepper


Toss together arugula, lemon juice, and salt in bowl. Drizzle with oil and toss to combine. Sprinkle with pepper to taste, if desired.

Makes 6 servings
