Nutrition: Winter produce
Find fresh produce
By Alysse Anderegg, WAC Dietitian & Wellness Coach
Winter can be a difficult time of the year to find good local produce. The store may not be overflowing with the warmer-weather bounty of plump tomatoes and sweet berries, but that doesn’t mean there aren’t good veggies to be had—you just need to know what to look for! Right now, in-season produce includes Brussels sprouts, leeks, mushrooms, turnips, greens, and some other root vegetables. Stop by your local farmers market to see exactly what they have in store. Here are a few recipes to spark inspiration!
- Crisp gnocchi with Brussels sprouts and brown butter
- Parsnip shoestring fries
- Roasted beet and goat cheese salad
